1 teaspoon olive oil
3 eggs
Salt and ground black pepper, to taste
1 tablespoon ricotta cheese
¼ cup chopped spinach
1 tablespoon chopped parsley

  1. Grease the air fryer basket with olive oil. Preheat the air fryer oven to 330ºF
    (166ºC).
  2. In a bowl, beat the eggs with a fork and sprinkle salt and pepper.
  3. Add the ricotta, spinach, and parsley and then transfer to the air fryer oven.
    Select Bake with Convection, and cook for 10 minutes or until the egg is set.
  4. Serve warm.
