Prep time: 10 minutes | Cook time: 20 minutes | Serves 4
1 cup leftover turkey, cut into bite-sized chunks
1 leek, sliced
1 Serrano pepper, deseeded and chopped
2 bell peppers, deseeded and chopped
2 tablespoons Tabasco sauce
½ cup sour cream
1 heaping tablespoon fresh cilantro, chopped
1 teaspoon hot paprika
¾ teaspoon kosher salt
½ teaspoon ground black pepper
4 hamburger buns
Cooking spray

  1. Preheat the air fryer oven to 385ºF (196ºC). Spritz a baking pan with
    cooking spray.
  2. Mix all the ingredients, except for the buns, in a large bowl. Toss to
    combine well.
  3. Pour the mixture in the baking pan and place in the air fryer oven. Select
    Bake with Convection, and cook for 20 minutes or until the turkey is well
    browned and the leek is tender.
  4. Assemble the hamburger buns with the turkey mixture and serve
    immediately.
